Convert Image to 8bit greyscale & Create Large Images

I own a laser etching machine that etches photos on various materials. I use CorelDRAW12 to drive the machine. I am trying to create very large photos that I will cut on multiple 12" tiles that will produce the entire image when the tiles are assembled. My dilemma is... after I enlarge my photo to the desired dimensions, I need to export it as 8 bit greyscale before importing them into my laser photo software. Everytime I attempt this the "convert to bitmap" dialog box will not let me adjust the image dimensions any larger than 16.666"?? Even if I lower the resolution... How do I export large images??

P.S. Anyone have the best process to enlarge these images without losing quality? Some images could be up to 8' x 12'. I was told to use photoshop to set the image to 300dpi then export as an eps?? They said this image should be resizable in Corel without losing anything???
