Convert from RAID 1 to RAID 0?

Hi all,

I'm looking at buying a new HP desktop with a 160 Gb RAID 1 configuration. If and when these drives ever get full and I want the entire 320 Gb for storage, can I switch to RAID 0 or the absense of RAID? What will I need to do? Has anyone out there ever done this?
