Convert a 4-color project to a 2 Color (Black/PMS spot)?

I'm running into a little problem...

With a 2 color newsletter project, I'm supposed to be using Process Black and Pantone 280 C as a spot color, but when I preflight my file, it says my project is 4 color with a spot color. Is there an easy way to delete the C, M, Y separations and just keep the K and spot color?

I converted all of my EPS photos into grayscale, and various logos to use the PMS 280 C color... but when I go into Separations Preview, it still shows C M Y plates.

How can I convert a 4-color CMYK project into a 2 Color Black/Spot project?
I'm using InDesign CS (3.0).

What actually shows up on the CMY seps? Is it text? This is possible - at least in Pagemaker - when text is imported directly from Word files or a web page. If so, it sounds as though the text (or whatever shows up on the CMY seps) is using RGB black rather than just black (100%K). You need to pinpoint what is actually registering on the CMY plates to isolate just what is still coloured with the C, M and Y.
 
Does it show anything on your screen when you isolate the C, M, & Y plates in the separation preview? If nothing appears, simply suppress those inks when you print in the ink manager.
