Configuring Linux - Keeping only the necessary Daemons

I own a laptop computer with 48 MB Ram, and I would like to know which Daemons that are needed. For example, RedHat 7.1 installs the mail server daemons that I don't need.

Is there a web site that I can go to for this type of information.

I don't know the web pages. But you can man on idividual daemon and find out about it and decide your self weather you need that or not.

Unix and linux use their mail daemons for multiple systems purposes as well as routing mail from place to place.
Some distributions allow you to configure your mail for a standalone, no networked env. This is a safer bet than trying to disable mail.
If you have more than one mail server(sendmail and postfix say) installed then you can uninstall the one you do not want (rpm -e) Like patel said: See the man pages (rpm ,sendmail) for more info.
