I would be grateful for any suggestions on whether the following would be a good plan:

700 users, an average mix of light, medium and heavy. Circa 50,000 emails per day with a 10GB delta.

Exchange 2007 CCR 2 node cluster on a pair of Blades each with 2 dual core CPUs, 16GB of RAM connected to a SAN.

HT and CAS rolestogether on virtual machines as NLB pair on the Blades using HyperV. Amount of RAM TBC.

Questions:
Anyone doing CAS/HT on VMs in a production environment?
Anyone hosting those VMs on an MBX?
 
You can virtualize all the roles. I did a 15,000 seat engagement last year virtualizing all the roles. You only scale the MBX servers up to a point, then you scale out. I was using 2500 users per virtual MBX server. You can do SCC or CCR, but if you use Windows clustering, then don't leverage the HA features of the virtualization platform.
