Compiling new kernel 1

I'm wondering if their is any good documentation or howto on compiling a new kernel. I've got about 6 pages in my book on compiling a new kernel, and it's not enough info. I'm using SuSE PRO if that's relevant.

Is it best to take as much out of the kernel as possible? I'm assuming a smaller kernel means better performance? (As long as it supports what I need...)
