Colour management with screen in Grayscale mode?

I have a series of 16 pictures which will be printed in (cmyk)gray, but i am just allowed to work on them in RGB mode. I heard there is a possibilty to switch your screen (so not the picture..) in grayscale mode, so I can see how they will turn out in gray and can work on them, without loosing the FGB info.. Where do i do this?, in photoshop?

...please clarify whether you mean the final images will be printed in four colours CMYK or just the K of CMYK...

...your solution in any case would be to set your view to proof colours under the view menu and change your proff setup options to either a working CMYK space or a working greyscale space...
