color space - cmyk or spot?

I am sending artwork to a printer that should be a Pantone
spot color. In Illustrator I have color mode, color profile,
and color space. Too many choices for me. In my swatches palatte I have the correct spot colors but the color mode of the document says CMYK. Color space says CMYK. For color profile, I have "none" There is no choice in color mode that
says "spot". If this goes to the printer this way will I hear.. "you sent it in CMYK"? Please... What am I missing?
 
Leave the colour mode as CMYK and set the individual swatch to be SPOT (or not Process) within the swatch pallete.

If set to SPOT then the colour will print on it's own plate rather than being split to the CMYK plates.

ADDITION (just in case):
If you are bringing said graphic into Quark Xpress and wish it to print as a SPOT then ensure that you have the EXACT same colour name in the Quark Document
and it is set to be a SPOT colour in there too.
