I'm looking to acheive a finished image to look like this
The color sasturation and brightness along with sharpness are not what you'd get from a digital camera so I presume its done in Photoshop - can anyone give any pointers on how this effect has been gained please?
 
I don't know...you can get some pretty good shots from a Proffesional digital camera these days. check out the Cannon EOS-IDs Mark II Body.
retails at about $13,000 Australian.

I'm sure that would be able to take a shot like that.

I agree. The sharpness is certainly down to the camera/photographer rather than Photoshop. The color saturation and brightness may have been enhanced in Photoshop, but I would guess that the original image was pretty good to start with. There doesn't seem to be any evidence of excessive Photoshop work, so any alterations were probably subtle ones.
 
I think my Canon 20D could take this shot. A 5D certainly could. Both assuming the use of a good lense and a tripod. It probably is beyond the ability of point & shoot cameras.
 
I just returned from a month in South Africa Bush where I took 600+ wildlife pics with my Konica Minolta 6 Mpxl 12X optical zoom digital camera.

All my good pics look as good as your sample, not like my 6 year old Olympus 1.5 Mpxl digital.
