Cloned WSS server in VMWare - how to rename?

Hi,

I created a clone of our production WSS server in VMWare for testing purposes. This virtual server has a different name than the production server (for obvious reasons).

How do I change all the settings in Sharepoint so that any/all instances of "old_servername" change to "new_servername"? We have also created a new SQL test DB to use as well for this.
