Clear Aloha Database of testing 'junk'

Hello all-
Thank you guys for all of your help up to this point.

I have finished my Aloha implementation, but have a small problem. How do I clear all of the junk that I have put into my database and on day 1 for the restaurant 'start over' so-to-speak? Basically when the restaurant opens I need all of the information that I entered for testing to dissapear and the first day to be the first day of business. What files/folders should I/can I delete?

Go into the Aloha folder and delete the dated subfolders for the days you do not want to see anymore. Every thing goes- labor, sales, product mix, etc.

Remove the dated subdirectories as stated above with a note. You will lose all payroll data if you have been using the system for timekeeping. On go live day you can remove junk from the current day by deleting the "trans.log" from "data". This will remove all timekeeping as well. Report first if needed.
