On the Cisco ip phone system can you but other ip phones on it instead of Cisco phones?

Yes, you can add other phones as sip devices ... but the real question is why would you want to? I can understand adding teleconferencing equipment but that is about it.

Well, non cisco sip devices tend to be a lot cheaper than a cisco ip phone, and if price is a concern that would be a viable option.
However, beware as not all features are supported on non-cisco SIP devices. Obviously you will have to consult with the manufacturer as well as buy a couple, get them working and see what you get.

This is a college, and the students are walking off with the phones so they want cheaper phones because of this. Losing some of the features is really not a big deal to them. Would any SIP Phone work?

What version of Call Manager / UCM are you running? Most sip phones should work as sip is merely a standard.

You have to have call manager 5.x and higher to get sip phone registration and yes in theory all sip phones should work.
How easy it is to get them to work depends on the phone really.
