Yes, via PDM (the web interface to your PIX) you can look at the usage stats. The only issue I have with this is the farthest you can go back is 5 days at 2-hour intervals.
Open I.E. and enter the IP address of your PIX (it's a secure connection, so you have to use You will see on the main display page on the left that there are some real time VPN stats (IKE and IPSec tunnel usage). You can also go to the Monitoring tab at the top and then to VPN Connection Graphs and VPN Statistics on the left.
