You can connect with the ethernet ports, but for a better lab so that all ethernet ports will be available, you'd be best to get WIC-1T cards for the 2610's and use the 3640 as a frame relay switch. I would actually ditch those 2610's and get XM series (2611XM), or at least one 2610XM---you'll need it for CCNA for SDM.
As Burt said - the WIC-1T would work fine and you will find them cheaper then a WIC-2T.
If you go with a WIC-2T, be aware of the connector you will need on the DCE/DTE cable, WIC-1T's and WIC-2T's use different connectors.
For the 3640 as a Frame Relay switch look for a Network Module NM-4A/S - it has 4 serial connections for connecting up to 4 other routers to it as a Frame Relay switch.
I also agree about the 2610 - you can get 2610XM's and 2620XM's on Ebay for $75 to $130 each, the 2610's go for about $20 now!! The 26xxXM routers are faster, hold more DRAM and FLASH and have Fast Ethernet interfaces!!! I have a 2610 in my lab as the Frame relay switch All my other routers are 26xxXM's or 3620's.
