A couple of years ago I had developed a small utility application that charts the SMTP traffic volume flowing through your exchange server. I will give it to you for FREE if you are interested.
It operates solely on remote performance counter retrieval, so doesn't require any database setups or anything. Basically, it retrieves how many messages were inbound/outbound during the latest interval and starts building a chart. Performance Monitor basically does the same thing, but I consider its charting functionality somewhat USELESS for something like this. I saw something similar for UNIX sendmail years back and kind of based it upon that.
