our company name will be changing and we would like to also change our email address domain. We are receiving tons of email for our current domain email address but I would like to stop/end the old domain.

One solution I had was to keep the old domain active for e-mail for a short period of time, but not deliver the messages to the intended recipient. Have all of the e-mails to oldname.com drop into a single mailbox with an auto-responder stating that the message was not delivered to the intended recipient and the sender would need to re-send the e-mail to "username@newname.com". That would be one way to end the use of that domain. We can do that for 30 days or so and we’d catch the bulk of the e-mails.

Is their any other ideas out there?

Depending on how many accounts you have, you could set all current accounts to forward to the new email address, but still do an auto response that indicates that the old address is no longer in use. You could also use wildcard catch-alls to to grab all the email as well, and use content filters to reroute and respond with dynamic fields. Not sure if all this would be easier than your own suggestion, but you might be able to save the work of sifting through all those emails that have been dumped into a single account.
