I have a SCO 5.0.5 Unix server that reads the correct time but in GMt. I need to change this to BST - I have tried the Time manager in SCOADMIN but there is no entry for BST.

I have checked the /etc/TIMEZONE but am unsure how to add the correct syntax.

In System Time Manager set Geographical area to 'Europe', European timezone to 'Greenwich Mean Time (GMT)' and Daylight savings to 'Yes'.
Your time should then display as BST. You may have to set the time again.
