Changing Data Type When Making a New Table.

How does one change data types when making a new table?. It would seem that their is/should be a function that would permit changing a data type from integer, double, or single to currency, or vice-versa. Any and all suggestions, recommendations, and/or work arounds would be sincerely appreciated.
