Is there a command line command to change the retention date on a previously saved saveset? (I don't want to change the policy, only the retention date for one specific save set.)

Depends on your version. Beginning with 6.0, you can use nsrmm to change retention for a saveset. Check the man page or command line reference but your syntax should look something like this:
nsrmm -S <ssid> -e <new retention time>
