I want to change the IP address of the VIO server from 10.x to 192.168.x. Would that impact the share ethernet mapping of the LPARs?

I don't think so. SEA (shared ethernet adapter) operates on a lower level. The VIOS IP stack is on an interface device (enX) which is defined on top of the SEA device (entX).

Just make sure that your VIOS can still reach the "address to ping" IP address in case of a SEA-Failover configuration so it doesn't shut itself down and fails over to the other VIOS's SEA...
