You need to edit the boot mode in the /etc/inittab file.
I don't have a linux machine handy so I can't give you the exact syntax of the line you need to change but look for a short line which will be of the format:
...:5:...
You need to change this 5 to a 3 and your machine will then boot in normal text mode. Mise Le Meas,
