Anyone have any experience with centralized Unity voicemail that employs desktop messaging? Our Firewalls will handle QOS, Traffic Shaping and Priority Queuing, but we are not equipped to provide QoS end-to-end. Considering we have exchange servers at the central and remote sites, is this buildout feasable?

yes it is.
Unity does not care where your exchange server is located.
Multiple exchnge servers can be integrated with unity.

Proper Unity design does not encourage remote Exchange servers. Definitely, there should be no Firewall between Unity and it's Mailstore. Latency would more than likely kill the users experience. They'll be trying to retrieve the messages and waiting on delivery.
The better design is to deploy a Unity server at the remotes along with the Mailstore and do digital networking between them.
