Centralized Call Manager Call Processsing over WAN

My company is exploring the idea of Centralized Call processing over our WAN VPN. We are looking at a central Call Manager publisher and subscriber in one office and setting up SRST routers with Unity servers in our remote offices so that the only traffice going over the WAN would be call set up and tear down. According to our vendor we need end to end QOS for this approach for Cisco support. However I can't locate and documentation with the specifics of what Cisco will support and what they will not support. Anyone who knows where I can find this info or anyone who has worked with this type of build out over a WAN VPN NOT using QOS tags, please give feedback.
