CDONTS messages never delivered

I've got a contact submission form that uses CDONTS to send email. I'm sure the code is working fine and that we just never configured our web server correctly when we brought the website in house.

I've seen numerous posts that say "configure" the default SMTP mail server. I've found the server extensions tab under the default web site where you enter some email information but I can't find any documentation about exactly WHAT you are supposed to enter.

We have an exchange server running on a server separate from our web server. It is named Apexserver1. The web server is Apexserver2. The email address to receive email messages is info@apexhomes.net. I don't mind using the Administrator@apexhomes.net email account to send mail if I have to.

Where do I enter this information in? Under the email button of the server extension tab I have the options:

Web servers mail address -- What is this? I've heard of people having email addresses but not servers.
Contact email address -- Is this a contact at our company for the person submitting the info request?
SMTP mail server -- Is this the Exchange server?

What am I supposed to enter here? None of this seems to make any sense compared to what I know needs to be used to send an email message: username, password of email account and recipient adddress (info@apexhomes.net)
