I'm having a problem where if I try to open a share on a 2003 DC from a computer on the domain, it works, but if I try to open the same share from a computer that is not a member of the domain, it doesn't work, like a laptop. It keeps prompting for a user name and password.

I know the password is good because it works on the domain computers, and it works for outlook/exchange on the same server from non-domain computers.

This affects at least 3 computers, and it used to work fine, it just started happening all of a sudden.

When you get prompted for password try: domain\user and password.

Alternatively... if this doesn't work... or for easier memory, you can use username@domain for the username instead of the domain\username

Tried domain\user and user@domain, neither of them work.

This is a server that was working for at least 6 months and all of a sudden this happened out of the blue. maybe a windows update or something.

I know this isn't an answer long term, but just to narrow down a permission issue... Have you tried to Enable a share for Everyone to have Full Control and see if you can then get in without a username or password prompt?? This may at least help narrowing down where the issue lies.
Also, make sure there isn't Any inheritence from another folder on permissions.... You seem to be seeing the system fine, but I'm not convinced it's not a permission issue.

also, is this Pro or Home??
