Can you strip attachments and save them else where

Is there a way to strip off an attachment off of an e-mail and save it in a folder so it isn't sent to the person's computer, but they still recieve a message about the attachment?
 
We use a program called mail essentials to strip attachments off of e-mails before it gets to the user, you can set up messages to send them to show that an attachment has been stripped. We are using microsoft exchange server for our e-mail program and we have incoming mail filtered with the mail essentials program.
