I want to set up the exchange server to run only internally for inter-office use. Is that possible? and how would I go about setting it up?

You could set it up normally and deny it access to the internet. If you don't have an internet connection not to worry just set it up as usual. If you do have an internet connection and everyone is on the same subnet you could put the wrong gateway in the tcp/ip config. . .
Maybe there is an other more clean way of doing it, oh yea you could remove the smtp connector thingy, but I don't remember how to do it. I think you just don't set it up when you install exchange.

Televison will make radio obsolete.
