Can the administrator read others emails?

I'm not paranoid but asking on behalf of my boss.

How many ways are there for the email administrator to get a copy of an incoming email to a particular email address? I know you can setup a rule within the persons email rules but that would be too obvious.

If I know their password and userid can I setup an IMAP for my inbox?

Are there other ways? We suspect our administrator may be peeking at the CEO's emails but we want to be sure. How do we go about finding out?

Yes - there are plenty of ways.

Journal to another mailbox
Grant rights to the mailbox itself and open it in Outlook

You could look in the event logs to see if there are entries that he's accessing the mailbox. HOWEVER, by default, you may see entries even if he's scheduling a meeting with the CEO and queries the free busy info.

If there is a concern, time to call in a consultant to start looking.
