Can I Save all of a users email messages on the server

How can I save or keep all of a email users messages on the server without deleting them. I am having problems with one user using an Iphone and they are not receiving all of their email messages. They leave their email outlook client on 24/7 on their work computer and they sometimes do not receive all of the emails. What I would like to do is to not delete the email messages from that persons email box after they are received in Outlook, but to just keep everything on the server. I am running mdaemon 10.0.5

Get Outlook using POP3 with a "leave messages on server for 30 days" in the advanced settings.

Make sure the iPhone is using IMAP over SSL rather than POP3 which is probably your issue.
