Can I create text with a photograph as the fill

What would be the best way to place some text over a photograph, then have the rest of the photo disappear just leaving the text with the photo as the fill. I can do this in photoshop no problem, but I wondered how I could do the same with illustrator CS?
 
Place the photo in the illust doc – place the text over that – then make a clipping path (apple + 7 or object > clipping path > make.

You can undo the clipping path if you need to change the placement.
