Call Observe

If you are wanting to have someone "listen" to calls:
1) Set up extensions in a Service Observing group
2) Set up extensions for that group as a "Service Observer"
3) Put Service Observe button on Observer's phone
..... prior to this, study your state's laws. You don't want to find yourself in the middle of a court case!
