bullets change when converted

Try using a different bullet - it could be that the bullet is from a font that cannot be embedded in the PDF. In Word, go to Format>Bullets & Numbering, click the 'bullets' tab and selet anything other than 'none' and then click the 'customise' button from where you can click the 'font' button and change the font used for the bullet.
