This should be simple but escapes me:

I have a spreadsheet that is replacing a paper form that has 10 check boxes plus a number of other fields. To replace the check boxes I would like the user to just put an x in the cell. Unfortunately, I can't trust the users to do that (factory crew) so I would like to change the value of the cell to X if it has anything in it, or just leave it empty if not. I don't want to add any buttons for corrections, it should work in the background.

Suggestions?

Have a look at Data > Validation. You can disallow anything BUT "x" being put into the cell.
