I just got Professional Linux Programming (ISBN 1861003013) that has two chapters on PostgreSQL - good enough to get you going if you already know SQL and have worked with a database like Oracle or Sybase.
Also, Bruce Momligan has a book out; it is also online, cannot remember URL but if you start rummaging around in Linuxnewbie.org and such places, you will find it.
