I am trying to create a booklet that is 8.5 X 11 open or 4.25 x 11 closed. So I set up the page to be portrait 8.5 x 11 and chose booklet and it said 4.25 x 11 which was correct and when I went back to the document the first page was correct showing as 4.25 x 11, but all of the other pages of the booklet show up as twice the width they should be. Also, the property bar shows that the document is letter-size, but if I move the mouse on to the property bar, it changes itself to tabloid, also I noticed the icon on the property bar for page orientation is set to landscape and neither of these items will allow me to change them. My print setup is correctly set to portrait, letter-size. I'm not sure what else to do to fix this problem...

For starters, when you say "all the other pages of the booklet show up as twice the width" do you mean they are showing up as 8.5 X 11? This would actually be correct width for any "inside" pages - each half would only be 4.25" wide, but the physical paper size would be 8.5". I am further guessing that when you get to the last page - it will put the first page on the right, and the last page (you wil be currently working on) on the left. I am not sure why it is showing "tabloid" for the page size. My guess is all of this is tied into the "booklet" setting. Try pritting a sample page too and see if it is just reporting incorrectly, or if the booklet truly is set to tabloid.

Let us know which version you are using, you may be able to edit the "booklet" template. Otherwise, it may be easier to recreate the document as a standard 8.5X11 document, then just add multiple pages. And if you want to keep only the 4.25 width, as you may be cutting the pages or whatever, it should keep that 4.25" width when you add multiple pages.
