block traffic on port 25 except from defined ip

You just need to change the current policy.
You will probably have a policy from untrust to dmz or trust with a source of any, destination MIP or VIP service mail permit.
You just need to change the source to a.b.c.d 255.255.255.255 which on screen_os 3.x you may need to do in the address book first, by adding it. This would prevent traffic from any source other than the defined ip addy.
