Black/White to JPEG file using Illustrator

How do I turn off automatic color recognition & apply "Black/White" to a JPEG file using Illustrator?
When I print a Quickbooks invoice with a letterhead of JPEG file, it prints with a dark gray background.
As a reference, when I insert the same JPEG file to MS Word & change Image Control to "Black/White", it does NOT print with a dark gray background. Does Illustrator have a similar feature?

Why are you saving Illustrator files as JPGs? Try exporting as PNGs - this will allow you to choose a transparent background to the image, and to set resolution and colour mode.
