Hello.

I have a server with 5 nics. I have bound 4 of those 5 nics to 127.0.0.1 to prevent package leakage and to prevent communication outside the machine entirely. What implications are there when using this approach?

Here's a better idea. If you are only using one NIC, just disable the other four!

Since we are using VMware Server on this machine, we have to have each nic active in order for the virtual adapters to function correctly. So, your suggestion is obvious if we only needed one active nic. But we need all 5 active, just 4 need to be disabled in a manner that will not allow them to spend packets out or recieve packets in.
