Best way to patch only certain servers in the site?

Would this be the best way to manage updates to certain servers? Create sub OUs under the existing OUs the servers are currently in and call it something like sms managed servers. Move the servers that I want to get patches into this sub OU. Then create a collection that populates itself from this OU. Is there a way I could do this without creating the extra OUs?

You do not need to create OUs for this. You can create a collection and manually assign the servers to that collection. So if you want, you could do

SQL Server Collection
SMS Server Collection
Exchange Server Collection
etc...

and then deploy to each collection,
