Best practice while using Veritas backup 9.1 on SBS 2k3?

My eyes are about to start bleeding I've read so much stuff on this and I'm still a bit confused.

I currently have a SBS 2003 server using only Exchange 2003. I'm using the SBS veritas product that allows me to back up exchange. I've setup my backup job using the defualt wizard. From what I understand, this isn't adviseable. I should do something like a brick backup for the exchange mailboxes?

Could anyone explain/layout a typical backup plan for a senario like mine? We currently have two weeks worth of tapes. I'm doing a full backup each night because I've heard horror stories about incrementals. We use the server for Exchange anf files mostly.

At this time, I only backup data. Again, I've heard storie about trying to do a complete restore from a tape, its usually best to rebuild the system then bring the data back. We do have mirrored HD's so that helps.
