A lot of my job is developing detailed specifications for screens and reports that may get changed many times by many different people. We use Track Changes, and I find it convenient to use multiple colours for different authors.
While doing a search of an advanced usage problem (using color as well as colour), I noticed some people had got stuck at a basic level, wondering why colours were not controllable. Most of these were closed threads.
At least in Word 2003, multiple colours indicate that you have the [By Author] option set in Tools > Options and the [Track Changes] tab. You should be able to change it.
This would also be the place to fix it if someone always sees all tracked changes as grey or whatever.
