Backup open files with 8.5 in Novell 4.11

I am running Backup Exec 8.5 without the open file option. Will a backup with the open file option restore the full database? How can it backup an open file? I’ve been told that it’s not possible to really backup an open file. The company I work for runs 24/7. I can’t shutdown everyone to get a backup. I need advice. Thank you.
