All I have right now is office 2003 in front of me, but you should be able to use File|Export and then go through the process choosing what you want to export. Else go into help and search for export.
If you have created a "personal Folders" then you will have been asked for a location for th epersonal folders file. The easiest way to backup is to go to this location and copy the personal folders.pst to another location.
just make sure you exit outlook first.

You can choose how often it reminds you, and it runs automatically when you exit Outlook. Don't be put off by 2003 in the title, runs on 2000 and later.
