Backup email server with retry

I am setting up Redhat Linux 7.1 for possible use as a backup email server for our Exchange 5.5. I want to use a secondary MX record that would point to the sendmail server and catch any email whenver the primary (Exchange) server was down, then forward it when it comes back up. Is is this
possible? How would I setup sendmail?
