Backup C Drive (restore to new drive)

Being using BE12 for several months and now i need HELP to see if this can be done.. I have a windows 2000 server that i have already installed a new hard drive and formatted (is ready).i want to fully backup the c drive onto tape then restore to the new hard drive then remove old drive and boot from new drive..can someone tell me if this is possible and how to do it right??

Ignore the backup exec.
Put both drives in.
Create a mirror in windows.
Edit boot.ini to point at both.
Restart on other disk.

Done.
