Backup and Restore of sharepoint

What is the best way to Backup and restore SahrePoint? We have tried backing up the Data directory and restoring, but when you restore nothing seems to happen. Job says it completed but we are still looking at the web site with the same content(we modified the site after the back up to make sure the back up had woked.) Tried restoring to another directory and then copying the databases to the data directory but we get an error message saying the files are in use. Turned off IIS and SharePoint services and I still could not copy the database to the data directory.
