Back up IDE drive to SCSI raid

Hi,
I have a web/file server that runs off a 40 gig IDE hard drive. The hard drive recently crashed, but after half a day and a reformat all is well again. Thankfully I had backed everything up just the day before.
My brother in law donated an old Adaptec SCSI controller card and four 18 gig IBM SCSI hard drives to me to prevent this from happening again.
My question is: Can I install the four SCSI drives on the existing Win 2K pro system using a RAID 0 + 1 array and "image" the existing 30 gigs or so of data to the SCSI drives? Or do I have to reformat and start from scratch?
