Automatic folder redirection and creation question?

I have done this at several of my schools with no issues due to users being teachers and no other users except domain admins need to see their documents.

I'm trying to follow same procedure for my district office; however, I will run into situations where some of my department heads want to be able to see and if need be, manipulate documents in their employee's "My Documents" folder. I will run into a simular sitation next school year when I start creating individual student accounts (I use generic accounts now) and I'll want that automatic process of folder creation and redirection to happen, but I'll need teachers to have access to those student directories.

Is it just a simple matter of adding that user or security group to the user folder's permissions as a full control after the folder is created? I know the permissions on these automatically created folders can get a little "hinky" if messed with.
