Hiya
I think the easiest way is to set up a custom recipient using exchange admin (of type Internet address) and fill in your bosses e-mail details in that. Next, go to his regular recipient details, again in exch admin, and select that you want emails delivered to his alternative address as well as his GAL address. I've had to do quite a lot of this since our company got taken over and it works very well.
