I am moving to CUCM for voice and Unity for voice mail. I'd prefer to keep my call applications on something other than the Unity that is handling the voice mail. Any suggestions for Auto Attendant?

I do not think you will have any issues having your call applications on Unity, we have approximately 20 different buildings across the country using the same Unity for voice mail as well as Auto Attendants etc and it works very well (close to 5000 people and growing every day as we add people and convert locations). Some of the major advantages are that there is only one system that needs to be backed up, maintenance is minimised, as are hardware costs, and, once you are used to it, it is quite easy to do.
We went from a primarily Nortel house, to Cisco in just a few years and even though I did not think it would be a good idea initially, it worked out very well.
 
We are in the process of converting from the very easy and intuitive CallPilot and I have yet to find a system that compares. I personally do not have an issue with voice mail and applications on the same "box" as this is what Meridian Mail, CallPilot, Octel, and every other voice mail system does. My "data application" minded manager thinks it would be better to seperate the 2. Today we are centralized on Unity and using CallPilot for the apps. As the Nortel gear goes away I have to find a replacement.

You could run it on UCCX. I have my AA as a backup on UCCX incase Unity goes down for whatever reason. Its much easier to work with on Unity however.
